John Benson, prior to his stellar restaurant career, was a rock star – well, not as well-known as most, but he did live the rock-and-roll lifestyle for some time! He was fortunate to play shows with Perry Farrell from Jane's Addiction, The Chemical Brothers, Two Live Crew, and DJ Swamp (Beck's DJ), among others. Pretty cool. For some reason, John decided to leave the the music scene and begin a career in the hospitality industry.
John started his career in St. Louis, Missouri, and quickly rose to become head waiter and sommelier at an upscale French restaurant, Chez Leon. Chez Leon has been recognized as one of St. Louis’ premier fine dining restaurants and has been featured on Food Network‟s “Best Of” program. During John‟s employment at Chez Leon he removed himself from the dining room staff and held the position of saucier in their classic French kitchen to gain experience in the culinary arts. After several years learning traditional French food and wine culture from Chez Leon proprietor, Leon Bierbaum, John and his now wife Megan Benson, moved to Denver, Colorado.
In Colorado, John received his sommelier certificates from the International Sommelier‟s Guild and from the Court of Masters and took his first job in Denver as Sommelier at Kevin Taylor’s at the Opera House where he hosted large wine events for celebrities and special occasions. After a while, John finally found himself running the Indulge restaurants for Peter and Delinda and has never been happier!
