My name is Tetsu Yamada and I am a Michelin Sushi Chef.
I own and operate two Sushi restaurants in the Kyushu region of Japan.
I opened my first restaurant, "Yamasa Shoten Sushi Yoshi," in Saga prefecture in November 2007. And then, I opened the second Sushi restaurant, "Sushi Yamasa" at Nishinakasu, Fukuoka prefecture, in June 2019.
After hearing about our popularity in Saga Pref, a Michelin researcher visited our restaurant after hearing about our popularity. Eventually, Our restaurant was listed twice in the Michelin Guide. (2014, 2019)
