I am an Associate Professor of Nutrition at East Carolina University. I am also a Registered Dietitian Nutritionist. I have been teaching nutrition for about 20 years. During this time, I have published over 40 manuscripts in professional journals, 9 books (most of them were translate into other languages, such as Polish, Japanese, or Russian), and numerous articles for non-referee magazines and websites. I have volunteered extensively in working with the Academy of Nutrition and Dietetics. Over the last more than 15 years, I have served on an expert panel on vegetarian nutrition, authored professional resources for the Vegetarian Nutrition Dietetic Practice Group, co-authored the Vegetarian Toolkit, and worked on the vegetarian nutrition position paper. I have guest lectured on nutrition at hospitals, universities, and community centers on five continents, including North and South American, Europe, Asia, and Africa. Most recently, in December, 2021 and May 2022, I have taught nutrition in Europe as part of the Erasmus Plus Staff Mobility for teaching.
