Roni invites you into her kitchen for a fun vegan cooking class that covers whole foods, ingredients, and recipes from around the world, including vegan cheese, fermented foods, and tofu.
Meet roni as she demystifies tofu, its origins, and four common varieties: extra firm, firm, medium firm, and soft or silken, exploring savory and sweet uses.
Cut tofu into slices or cubes, press to drain, and sear in oil until golden. Drizzle soy sauce or tamari; extra-firm yields crunch, while firm is softer and may crumble.
Mix a savory spice blend with nutritional yeast, cumin, and paprika, coat crumbled tofu for a scramble to enjoy on toast or in a breakfast burrito, or with hash browns.
Whisk a smoky marinade of soy, tamari, maple syrup, sesame oil, liquid smoke, paprika, garlic and ginger into sliced firm tofu. Marinate two hours, then bake at 400°F until flavorful.
Crispy pesto tofu cubes coated in cornstarch are pan-fried, then tossed with pesto and lemon, and served with blanched broccoli and kale.
Learn to make crispy cornstarch-coated extra-firm tofu pan-fried and simmered in a sweet and sour sauce with tamari, sesame oil, maple, vinegar, sesame seeds, ginger, and chili flakes.
Mix kimchi with tamari, sesame oil, maple syrup, sesame seeds, and salt, coat crumbled tofu, pan-sear, then top a bun with vegan mayo, cucumber and carrot ribbons, cilantro, and peanuts.
Create a quick vegan eggless egg salad by crumbling tofu with diced celery, herbs, nutritional yeast, turmeric, kalanamak, and vegan mayo for a bright, eggy flavor perfect for picnics.
Press the medium firm tofu to remove liquid and achieve a crumbly feta-like texture. Marinate in a brine of water, lemon juice, salt, vinegar, and shiro miso for two days.
