
Recipe of rice is 1 is to 1 (If you cook 2cups of rice, you put 2 cups of water)
I used Short Grain Rice
Steps in cooking rice:
· Wash the rice 4 to 5 times using a cold water
· Soak the rice for 20 minutes
· Drain the water
· Cook in the rice cooker
If using pot:
- Turn on the heat to medium
- When you see it boiling, turn down to the lowest temperature
- Cook it for 12minutes or until cook then turn it off.
- Don’t open the lid. Set aside for 10mins {this allow the rice to cook more without burning the bottom of rice}
TEZU "water dipping hands" - water mixed with a little bit of rice vinegar. This is here to moisten our hands so that the rice doesn't stick but also the vinegar is there as well so that we don't dilute the flavor of the rice too much
Wet towel - used to wipe our knife every time we cut our sushi so the rice won't stick in our knife
Bamboo mat - used to roll the sushi
Knife - to cut the sushi
Scissor - to cut the nori sheet
Spatula - to mix the rice vinegar into the rice
Recipe of sushi vinegar
For 2cups of rice
Vinegar: 70grams
Sugar: 30grams
Salt: 8grams
