Decorating cookies is a very old tradition that started back in the 14th century in Switzerland. They used intricately carved wooden molds and sugar decorations which was later introduced in the United States during the 17th century.
Now a days cookie decorating is still a strong tradition in families from all over the world. Furthermore, there are many new techniques and tools for this form of art even though the fundamental principles are the same, such as having a good cookie and icing recipe.

CHOCOLATE CUT OUT COOKIES
Ingredients:
14 tbsp unsalted butter (room temperature)
2 cage free eggs
3/4 cup sugar
3 cups of all porpuse flour
1/2 cup cocoa powder
1 1/2 tsp baking powder
2 tsp vanilla extract
1/2 tsp salt
PREPARATION:
1.- Sift the flour, baking powder, salt and cocoa powder.
2.- Beat the butter at slow speed until creamy, start adding the sugar little by little and beat for 4-5 minutes as medium speed, until it is light in color and fluffy.
3.- Add the eggs one a time.
4.- Add the vanilla extract and beat for one more minute until combine.
5.- Lower the speed to minimum and start adding the flour mix until a ball is form and the dough start to come out of the sides of the bowl.
In this part of the course you will learn how to prepare and tint royal icing. Also I will show you how to prepare a disposable pastry bag for cookie decorating.
ROYAL ICING RECIPE
INGREDIENTS
4 cups of powder sugar
4 tbsp meringue powder
1/4 cup filtered water
1 tsp clear vanilla extract or lime juice
PREPARATION
1.- Mix the meringue powder with the water and set aside.
2.- Sift the powder sugar in the mixer bowl and add the meringue powder mix.
3.- Start beating and slow speed and increase the speed to high and beat for 4 minutes. You can add few more drops of water if your powder sugar starts to form big balls.
4.- Add the vanilla extract or lime juice and mix for 1 more minute at high speed until firm peaks are formed.
5.- Put the icing in a sealed tight container.
Now that you have your royal icing ready I will show you the basic techniques to decorate cookies and how to make polka dots and lines.
In this part of the course you will learn to decorate cookies using a wet on wet technique. In this technique you use the same consistency icing in different colors to make several designs mixing and dragging the icing in different directions.
One of the easiest techniques is to use edible markers to draw on a dry iced cookie, the possibilities are endless as your iced cookie is a white canvas ready to be paint.
I like to call this technique "skinny cookies", Why? Because I don't cover all the cookie with icing, I just outline and make some details to the cookie.
Coloring pages cookies are very popular among the children. These cookies are also very easy and you can personalized the cookies according to your taste or occasion.
