Requirements

Description

Learn the paste first, then put it into practice with six classic eclairs. This course starts with the foundations of pate a choux: what happens inside the paste, what each ingredient does, and how to understand the result of your bake.

Flat, cracked, collapsed, damp or eggy shells are the problems addressed by the course. The opening theory lesson explains the chemistry and the process of choux pastry, how to cook the paste, and how to read a finished shell so you can identify what to change in the next batch.

The foundation bake then takes you through preparing and piping your first shells. The focus is on understanding the reasons behind the steps and working towards straight, even, hollow and crisp eclair shells.

You then make six classic eclairs:

  • Classic eclairs with smooth pastry cream

  • Lemon eclairs with a glossy mirror glaze

  • Coffee and vanilla eclairs with coffee cream, whipped ganache and fresh berries

  • Special eclairs with avocado-lime cremeux and cherry jelly

  • Exotic eclairs with mango and passion fruit cremeux and coconut crunch

  • Raspberry and chocolate eclairs with a delicate caramel crunch

This course is for home bakers whose eclairs are inconsistent, learners who can follow a recipe but want to understand how to fix a failed shell, and pastry beginners who want to learn choux from the foundations. It also suits cooks looking for refined classic eclairs and aspiring pastry sellers who want shells and fillings that hold their shape.

No previous eclair-making experience is required. Start with the theory and foundation bake before moving on to the fillings. Watch the demonstrations, pause or rewatch them when needed, and make the recipes in your own kitchen using the downloadable guides.

This Udemy course contains eight video lessons, approximately 2 hours and 34 minutes in total. The theory lesson has a recipe-adjustment checklist; each of the seven practical lessons has its own printable English recipe PDF.

The lessons have updated English audio and English and Spanish subtitles. The English narration is an AI-assisted translation of the original instructor recordings. Some original on-screen labels remain in Russian. This course contains the use of artificial intelligence.

The lemon glaze recipe uses ready-made neutral pastry glaze. Italian meringue is an optional finish mentioned in the recipe; separate meringue and neutral-glaze lessons are not included.
