I am Joan Berning and thrilled that you are interested in making your own artisanal cheese.
My interest started when I travelled to Friesland to visit my grandfather on his farm at the age of six. I loved the natural wholesome foods that he produced, his Friesian cows and Saanen goats and vowed that I would have that kind of lifestyle. But first I followed my interest in molecular biology at the University of Cape Town before combining the chemistry with farming and making cheese and establishing Finest Kind.
Starting with a few Saanen goats at the age of 28 I progressed to owning a Friesian cow and learning to make cheese from a friend in France. The first of a series of cheese making courses I will present here is on Gouda. These courses are about being self sufficient, producing local products using local ingredients. You will be making artisanal cheese in your own kitchen, but there is no stopping you developing into a boutique cheesery with the knowledge you gain here! We are passionate about local products and supporting local producers. If that's your bent too then you are at the right place. I have 40 years of experience in cheese making and love to pass on the old skills before we lose them.
