|Section 1: Big Dish Chicken|
Northwest Chinese food is very popular in China. At present, more and more people from other countries like this kind of food too.
However, people who live outside China have limited opportunity to taste authentic Northwest Chinese food. And some people want to learn how to cook authentic Northwest Chinese food at home.
This lecture will teach you how to cook tasty Northwest Chinese food with most simple method.
First step: cutting chicken, potato, green pepper, green onion, ginger and garlic, and then put cut chicken into a pot and put water over the chicken and cook it. When the water become boil, after 4-5 minutes take chicken out, and put them into cold water, when chicken become cold, take them out and wait for cooking.
Second step: first, putting oil into the pot, when the oil become hot, put prepared dry chili and red pepper into the pot, and stir-fry with chicken, after that put two kinds of soy source and stir-fry it, secondly, put hot water into the pot until it over the chicken, finally, put ginger, green onion, star anise, cinnamon and bay leaves into the pot, and waiting about 25 minutes.
Third step: After 25 minutes, put garlic and potatoes into the pot until the potatoes finish, finally, put green pepper, salt, chicken source, pepper source mix together. After 3 minutes, take the chicken and potatoes to the big dish.
|Section 2: Mutton Eaten with Hands|
|Preparation: lamb leg, carrots, onion, caraway, green onion, pepper grain, star anise, pepper source, salt, ginger.Firstly, cut lamb leg, carrots, caraway, green onion, onion.
|Secondly, put cut leg into a big pot and put cold water over the lamb and cook it. When the water become boil, after 5 minutes take the meat out. Thirdly, boiling the water, when the water become boil put meat into the pot, and then put cut carrots, star anise, pepper grain, ginger into the pot and cook it.|
After 30 minutes, put cut onion into the pot and continue cook it. After another 20 minutes, when the lamb finish, take them out and cut the meat. You can eat with onion and salt. In addition, you can put cut green onion, caraway, salt, pepper source into a small bowl, and then put soup into it.
