Section 1: The Benefits of Natural Yeast

In this lecture you will learn a few of the benefits of using Natural Yeast in your cooking and baking.

These benefits include that Natural Yeast Lowers the food on the Glycemic Index both the food it is in and food you eat within a few hours of eating something made with Natural Yeast.

Foods made with Natural Yeast are better for your teeth because the Starter (Natural Yeast) lowers the acidity of the food sometimes 50-100%. The Phytic acid in food is what removes the enamel from your teeth and causes tooth decay.

Natural yeast helps you feel full longer, in part because it makes it easier for your body to absorb the minerals and vitamins from the grains.

There have even been people who suffer from gluten intolerance and Celiac disease that were able to use Natural Yeast to make wonderful homemade breads and baked goods with regular wheat flour and they experienced no negative side effects. This video just names a handful of the things I use in my kitchen, including my bread machine (Zojirushi BBCCX20 Home Bakery Supreme Bread Machine) My wheat grinder (All Grain Flour Mill model A-22) and my standing mixer (Kitchenaid). I use a cast iron bread pan most of the time and stoneware flat cookie sheets for the pizza crust and bread sticks but any type of bread pan and cookie sheets will be great.

Section 2: How to feed and care for your starter

Obtaining a Natural Yeast or Sour Dough Starter.

Feeding your starter:

Use your starter until there is about a cup remaining. (When kept in a court jar). Add about 3/4 C SPRING water and mix it well. Add a cup of Flour and mix well. Place in fridge for 24 hours before using.

How often to feed:

For sure every 4 days, more often depending on how much you use it. '

Splitting your starter:

If you want to grow another starter, remove some from your existing starter and feed both starters as described above.

NOTE: I have included a "Starter Charter" that you can print and laminate. You can use a dry erase marker to keep track of when you fed and used your starter last. I like to put magnets on the back of the "Starter Charter" and place it on the front of the fridge as a reminder to check and care for your starters.

This is a simple chart to keep track of when you last fed or used your starters. You can print it on card stock and laminate it or use packaging tape to cover it. Put magnets on the back side if you wish, and stick it to your fridge front. Then use a dry erase marker to mark the day and am, pm. you last used or fed your starter(s).

In this video you will learn how to make whole wheat natural yeast bread with wholesome nutritional ingredients you can feel good about. In this lecture we will explore a few of the ingredients in our recipes. It is important to know what you are putting in your body as you truly "are what you eat." Not only does it help you make better choices but understanding your ingredients comes in handy when you are putting together a meal plan. It will help you keep your eating balanced and full of nutrients. An essencial part of over all health.


Honey is a natural sweetener that has been used for ages for everything from skin care to healing. It has nine minerals include calcium, copper, iron, magnesium, manganese, phosphorus, potassium, sodium and zinc. It is lower on the Glycemic index than refined sweeteners making it a healthier choice for those with diabetes. It is also sweeter than table sugar so you can use less, making the sugar content of your recipes lower without effecting their sweetness. It can be combined with many different things including ginger to aid with digestion, lemon as a weight loss detox, and garlic and cayenne pepper to heal a sore throat. I have used it on my skin to help heal scars and replenish the skin. It can be used to replace sugar in most recipes and I find it more satifiying and enjoyable.


Coconut Oil can be used for a virility of things. From helping to reduce wrinkles and dark circles, to being used by bikini competitors as their main fat source there are numerous reasons to include it in your daily diet. The fun thing is it is about as versatile in recipes as it is useful to the body. I have used it to make chocolates, and fry eggs. I use it to remove make up and moisturize my skin. Because it is constructed of medium chain fatty acids the body treats it more like an energy than a fat. It has actually been known to help with weightless, digestion, immune defense, energy levels and much more.

Section 4: Natural Yeast Pizza Crust

This video was made for the purpose of teaching how to use a standing mixer to mix breads. You can do this technique with any bread recipe including the one in the "Basic Natural Yeast Bread) lecture. This pizza crust is amazingly delicious and easy to do. Start it in the morning in preparation for an evening meal, or at night so you can have pizzas for lunch the next day.

Section 7: Natural Yeast Tortilla Shells

Tacos, chicken salad, breakfast burritos, casadias, chicken enchiladas, the list goes on. These nutrition packed tortilla shells are one of my absolute favorite Natural Yeast recipes. They only take a few minutes to start, give them their wait time, and then fry them up. You can make them and keep them in the fridge for breakfast burritos, or tacos, or anything you desire. They will keep for a couple weeks in the fridge and they taste amazing. Whole wheat and made with coconut oil they are also very good for your body. Give it a try! You'll be hooked from bite one.

It only takes about 4 minutes to start these cookies in the morning (or evening). You make a quick sponge with a few of the ingredients and then finish making the cookies 6-12 hours later when the starter has had a chance to work its magic. They are made with whole wheat flour, honey, coconut oil, and pumpkin. There isn't a single ingredient that doesn't offer nutritional benefits so they are pretty much guilt free cookies. You will take the first few ingredients in the recipe and make a sponge with them. Leave it out for 6-12 hours and then whip up the rest of the cake.
