Section 5: Glorious Greens: Health & Nutrition
02:47

This series of lectures in this section will introduce you to the numerous nutritional components of leafy greens and how they support our health and wellbeing!

Greens are some of the most nutritionally dense, enlivening foods available in nature! Calorie for calorie, leafy greens have more concentrated nutrition than any other group of food. They are packed with phytonutrients including minerals like calcium, iron, potassium and magnesium; vitamins including C, E, K and B vitamins; antioxidants; and even small amounts of essential Omega-3 fatty acids. This nutrient density gives greens many health benefits.

This lecture contains an introductory lesson on the nutritional content of leafy greens as well as a downloadable handout comparing the nutritional content of some common green vegetables.

05:01

Dark leafy greens are important sources of many nutrients especially antioxidants and anti-inflammatory phytonutrients.

Important phytonutrients in greens include beta-carotene, lutein and zeaxanthin which provide antioxidant protection against free radicals and help to strengthen the immune system. These important compounds help protect our cells from oxidative stress which can occur as a result of damage from free radicals generated during energy metabolism in the body.

04:20

Many vitamins are also found in leafy greens.

  • Vitamin K1
  • Vitamin A
  • Vitamin E
  • Vitamin C
  • Vitamin B9/Folate

This lecture also contains a downloadable handout for quick reference of foods which provide vitamin K. Since this vitamin plays an important role in blood clotting, individuals taking anticoagulant medications (blood thinners) like warfarin (Coumadin®), heparin, dalteparin, enoxaparin (Lovenox®) and tinzaparin (Innohep®) should aim to keep the amount of leafy greens and other sources of vitamin K in their diets consistent in order to avoid altering the level of the thinness of the blood. While it is generally not necessarily required to avoid leafy greens when taking such medications, it is important to keep vitamin K intake consistent over time and to discuss any dietary changes with a health professional.

02:51

In addition to these important vitamins, leafy greens provide healthy doses of many important minerals.

  • Magnesium
  • Manganese
  • Calcium
  • Potassium
02:16

Leafy greens contain iron which is important for healthy red blood cell production and oxygenation of the body. While plant-based iron is often harder to fully absorb than iron from animal sources, there are some easy ways to enhance the absorption of this important nutrient. Learn more about what foods can be combined with greens and other plant-based sources of iron to enhance the absorption of iron from these foods.

04:16

A unique component of green plants that can benefit our health in many ways when we consume them is chlorophyll. This green pigment gives plants their green color and allows them to facilitate one of the most miraculous processes on earth, the process of photosynthesis. Photosynthesis converts the energy of sunlight, water and carbon dioxide into glucose, a nutrient-dense fuel source.

Leafy greens are also great sources of healthy macronutrients which help provide the building blocks of our bodies and allow them to function optimally.

  • Fiber
  • Protein
  • Omega-3 Fatty Acids
Section 6: Glorious Greens For Your Unique Body
04:51

One of the core concepts of the Simple | Pure | WholeTM Wellness Method is the idea that each of us is an individual with unique health and lifestyle needs which can change with the seasons and throughout our lives.

Traditional Indian Ayurvedic Medicine also approaches health by looking at the uniqueness of each individual and her dominant dosha or body type. This philosophy suggests different types of leafy greens to help balance health for each general type of individual.

Enhancing your intake of dark leafy greens can help address cravings for bitter foods.

*If you are interested in further addressing your cravings and returning to a more intuitive way of eating, check out my Udemy course What To Eat?: An Eater's Guide to Conquering Cravings and Returning to An Intuitive Way of Eating!

Section 7: Embracing a Variety of Glorious Greens
04:46

Leafy green vegetables are the leaves of a variety of plants. Nearly one thousand species of plants with edible leaves are known with most belonging to herbaceous plants such as lettuce and spinach. Fortunately, this wide variety of leafy greens provides us with a wealth of options for nutritious and delicious meals!

A rotation will also help you avoid too much of the small amounts of anti-nutrients or other toxic substances that many leafy greens contain as natural defense mechanisms against predators in the wild.

02:52

Since greens within a family tend to contain similar nutrients and anti-nutrients, it is important to rotate among the different green vegetable families.

Fortunately there are many nutritious greens to choose from and a variety of delicious ways in which you can incorporate them into your life! Experiment with various types of greens and rotating greens from different families.
