Welcome to the Course! Students will get an overview of the lectures in Diner-Style Pies and More, the different pie baking hacks that will help them to create their pies, a discussion of the equipment needed, the different pastry finishing techniques and pies they will create.
This short quiz will help students identify their baking skills, what their experience has been, what they are comfortable with and what areas need more focus.
Students will make a batch of pastry dough using the food processor. This is the recipe they will use throughout the course to bake their delicious pies! Students will learn another pie baking hack - how to make a Pear Galette (or Crostata) during this lesson, using a free form rustic pie crust.
In this section, students will finish the pastry making process, blending the rest of the ingredients, and what needs to be done to prepare the pastry dough for rolling.

Students will learn to make lemon pie filling and whip meringues to create an amazing Diner-Style Lemon Meringue Pie. Recipe is included in the Easy as Pie ecookbook and as a download here.
Every Diner has a Chocolate Cream Pie and Students will make a S'mores Chocolate Cream Pie, using either of the pie crust pie baking hacks learned in Lectures 8 and 9 - the braided edge or ribbon edging method for their pie crust.
Diner-style Blueberry Pies are the bomb! In this lecture, students will create a blueberry pie, and using a pastry wheel, create a lattice top for their pie. Students can choose fluted, braided or ribbon edging for their pies.
For this pie baking hack, students will roll out pastry and make cherry mini pies, with a cutout top.
Every Diner worth its salt serves amazing Butter Tarts. Students will roll out pastry dough for Diner-Style Butter Tarts, cut the pastry to fit a tart pan, and prepare the butter tart filling.

Students are required to post a photo of one of their Diner-Style Pies in order to complete the course. Students will also take the Baking Skills Assessment again, and compare it to their first skills assessment in Lecture 3.
I am a student of life with over 25 years experience in business management, with a Masters Degree in Public Administration . For many years I was also the pastry chef for our family catering business, creating dozens and dozens of delicious sweet and savoury pies and desserts for catered events. Required to produce a large number of pies from scratch in a short time frame, I refined my baking skills and have learned many short cuts and tips to pass along to both beginner and experienced bakers . My latest hashtag is #piegoddess, and I love to create new recipes and bake family favorites for our friends and family. My husband and I are adventurers, live full time in our Fifth Wheel Recreational Vehicle and I choose Joy every day!
