In our school we make aquafaba from scratch: take Indian chickpeas, boil them and then use planetary mixers to get aquafaba.
Aquafaba recipe from scratch
Ingredients:
indian chickpeas 500 g
Equipment:
saucepan or pressure cooker
strainer
mixing bowl
Recipe:
Rinse chickpeas. Soak for 12 hours with 1,5 liters of water. Rinse again. Put into saucepan add 3 liters of water, boil for 3 hours. Or put into pressure cooker, add 800 g of water, boil for 2 hours with pressure. You must get ~600 g of aquafaba. Strain aquafaba, cool to room temperature. Store in fridge up to 3 days, sealed.

Put everything together: create up to 3 tier cake!
Add color and gold, use your imagination
