
Every had blackened steak or blackened chicken. It taste amazing. You simply take this seasoning cover generously both sides of the steak, place back in refrigerator for 30 minutes. Turn your oven onto 375 degree Fahrenheit. Then heat up a cast iron pan, place oil or clarified butter and sear both sides about 3 to 5 minutes each. Place in oven for 3 to 7 minutes depending on size of steak and rare, medium rare or well done. This is my go to easy meal when I am feeling beef with steamed, grilled vegetable like asparagus kind of dinner and maybe a baked potato if I am feeling the carb/starch. Ever have the hankering for a delicious Taco? I love Tacos! I always thought it was goofy how people will spend $3-$5 on a spice seasoning packet that they could literally make for pennies on the dollar. I first came across the Ras el Hanout seasoning one day at a specialty spice shop. Now you can find versions of it in the grocery store spice rack. This will taste far fresher from the roasting of fresh seeds and a lot more potent. Great for Beef and Steak and vegetables. I have even done a great version in the crock pot with pork shoulder, honey, and vegetable broth. Enjoy!
This is an all purpose meat seasoning that you can use on beef, chicken, pork, fish and lamb. It is very versatile. Great for summer grilling or slow cook pot meat with some garlic and onions.

I go through a lot of kicks with Italian food. When I make home made pasta, manicotti, meat sauce from scratch, but sometimes its just nice to have a go to easy spice blend that requires less work. You could literally boil some noodles, add some butter garlic and onto to a pan with this spice mix, pour over noodles and have a simple buttery Italian recipe. Add it to store bought sauces to give a more authentic flavor. Back when I was a young man traveling through New Orleans during Mardi Gras was my first encounter with Cajun food. A tiny run down looking restaurant that had a line out the door. I had to try it. Often these hole in the walls have some of the best food that you would never expect. In fact in my own home town their is a gas station taco place that taste like your in Mexico City at a taco cart. Ever since that first encounter with cajun food I have been a permanent fan. This is a great all around spice blend that should please anyone. Add more spice if you want it hotter, but not everyone can handle the heat.
I love hamburgers, unfortunately for me every when I get the craving for one fast-food places add Soy (I am allergic) to their products and most restaurants add soy sauce into their meat mixtures. The pre-made burger seasoning I have gotten from the store also have something in their (spices that messes me up). I started playing around with ratios and blends that pair perfectly with real sharp white cheddar cheese to make a delicious hamburger that remind me of some high end restaurants I've eaten at that charge $60 and up. I know $60 and up is crazy for just a burger, but I am somewhat of a foodie and needed to know how a special kobe beef burger tasted like. Enjoy!
I remember when I first used seasoned salt. Great on fries, tatter tots, and mixed into scrambled eggs. Their are a lot of ways to use seasoned salt, but those are my favorites. This one taste just like what you can get at the store except at least you actually know what is in it. Nothing annoys me more than looking at the back of a label to see weird silicon dioxide, natural and artificial flavors, Spices which is code for I better not eat this could have hidden allergens. Fun fact: Whenever you see natural and artificial flavoring in certain blueberry baking mixes, the fake blueberry flavoring is made from beavers anal gland. For real, look it up. Makes you wander what your actually eating when you can just label it natural artificial flavoring. Also makes you wander who decided to eat that and was like taste like blueberries?
This type of seasoning I like to use when I am trying to cut a few pounds. Simply mix it with some vinegar a tiny bit of olive oil and sprinkle over your salad, this makes a nice grilled chicken salad without a huge amount of calories compared to regular ranch dressing. The other fun thing you can do is pop some plain popcorn in a popcorn maker and sprinkle this over the top for a nice ranch seasoning popcorn mix.
Mexican food is one of my favorite foods growing up in Arizona. Memories of going over to my friends houses who's mothers treated me like family even though at first I didn't know any Spanish and they didn't know any English. We both learned. Some recipes I have been taught, I can never share. It's their family recipe, something passed down to only family and I respect that. If you ever make authentic french onion soup you use fresh ingredients, but sometimes you don't have the time or energy when you get home from work. No big deal when you have this pre-made in a glass jar in your cupboard waiting to be used. Chili Seasoning here is just like what you get at the store. It's not going to be overly spicy for those that have sensitive taste buds or stomachs. I think of my poor dad that has acid reflux. This is a chili seasoning mix that has great flavor, smokey blends, and won't burn the tar out of your mouth. Back when I was a kid my mom was on something called the Somoma diet, so since she did a good amount of the cooking thats what we would all eat. One of her favorites was making a Jamaican Jerk with rice and broccoli. I really love the meat. It reminded me of a smoke hot jerky on beef or chicken. It got saved to a recipe card, so I don't know what book this recipe came out of to give them credit, but I still make this recipe myself every once in awhile when I feel like eating jerky. Enjoy...
I enjoy Chinese five spice and it is so easy to make. Great in broth for Pho or anywhere else that you would be using Chinese five spice. The nice bonus here is you can grind your own and make it taste a hundreds fresher than what you would get form a premed mix jar.
When the fall comes, out comes the pumpkin pie, pumpkin cheesecake, pumpkin cream of rice for breakfast. Their is something lovely about the pumpkin spice combination. Make it yourself. Add more cinnamon if you like more cinnamon. And Enjoy.
Great in broth, vegetables, beef, lamb, pork, chicken, goat. So good, paired with some cilantro ginger rice.
This is an easy adobo seasoning recipe, comparable to what you would find in the store and without some the Yellow #5 i have seen in a few of the mixes. Do a quick google research on Color additives and be prepared to go down a rabbit hole for an hour or two about possible health risks, sensitives, and how little research has been done just to make something appear better, but adds no real nutritional value to your food. I choose to stay away as from them as best I can. This is a great chicken seasoning. Great on the grill.
Apple pie spice taste great in apple pie. In a pinch you can also cut up some apples, no seeds, throw into a pan with a little butter and a tablespoon of this spice mix and you have a great dessert to go with granola or vanilla ice cream for any guest to be impressed thinking you spent all day preparing a dessert.
Use like you would use any creole seasoning. Great with shrimp and fish. Grilled or in creole stew.
I think Pizza is one of those things that most people like. My dog even begs for it. I once watched my fiancés cat jump up on the counter, get into a box of cheese pizza and start chowing down. She ran over to shoo the cat away that ruined the last two pieces in the box and the cat took a slice with her to go. This is a great base for sauce, dipping sauce for bread sticks. Read the back of a table and you'll notice some commercially-produced seasoning mixes are often full of fillers, preservatives, coloring agents and allergens ( to those sensitive). I like to know what I am eating. One thing I remember as a child was making spice blends with my grandmother. She was a professional baker for years, as well as a great cook.

Let me share with you a personal story about myself and why making home made seasonings is so important to me...
For about 3 years I was always sick. My stomach hurt. I would randomly get bloated. I couldn't concentrate very well. Always tired. I would have random fevers. I actually thought I had a really bad flu at one point and went to an urgent care. They pushed on my belly and ouch I cried. They had me rush to the Emergency room. My appendix had burst they said. I was put in surgery and actually my intestines had enlarged and were covering up my appendix that was already leaking and gangrene. They said it must have been doing that for a period of months. The surgeon said it literally disintegrated in his hand. Along with my appendix they had to remove 15 pounds of intestinal mush and she my good intestine parts back together. Most intestines only weigh about 11 pounds. Anyway I spent 9 days in a hospital room on antibiotics, almost put on oxygen permanently, at one point I was getting worse.
The unit I was in was the telemetry unit for patients that need constant monitoring. Every four hours a new iv, shots, blood taken every morning and night. When I was there like 10 patients in the 20 room until had died. I had to walk the hallways with my Iv to get my intestines to work again, watching code reds randomly happen and people not coming back from it.
I was told many times I am lucky to be alive and I am. I'll take the giant scar on my stomach that they used to cut me open any day.
So I recovered over several weeks when I got home, sleeping in a recliner, taking all the pills, pain killers, etc... But I even after I still wasn't feeling right. I went to my Surgeon, Went to my primary Doctor and this is what happened....
Without knowing it I had been poisoning myself. I am allergic to legumes (soy, peanut butter, beans, etc, tree nuts, and nuts. Things I ate on a regular basis.
So why did I tell you this story....?
For example The word spices, artificial and natural flavor, can mean anything like soy, nuts, gluten egg, coloring agents, you don't know.
More and more kids are developing allergies. So please pay attention to how your children react to food as well as yourself.
