    Napolitano Pizza Sauce.

    Ingredients:

    1 Brown Onion.

    2 Cloves of Garlic.

    800 Grams of Crushed Tomato’s.

    1 Tablespoon of tomato paste.

    1 Tablespoon of Salt.

    1 Tablespoon of Sugar.

    1 Teaspoon of pepper.

    4 Basil Leafs.

    Method:

    Dice one brown onion & crush your cloves of garlic. Heat a medium sized pot with a touch of olive oil, and add your onions and garlic. Stirring regularly over a medium heat until the onions become soft and fragrant.

    Add your tomato paste frying it off for 1 – 2 minutes.

    Add your crushed tomatoes, salt, sugar and pepper and simmer for 2 – 4 hours.

    Roughly chop your basil at the very end of the cooking process and stir it into your sauce. This sauce is a lot thicker than a traditional Napoli sauce as we want a nice thick consistency that is suitable for our pizza bases.

Requirements

  • You will need basic kitchen equipment like mixing bowls, spatulas, scales etc.
  • A kitchen scale is a necessity in this course.
  • Be willing and able to hand mix the dough.
  • I will show you how to make your own sourdough in the course, learn how to make a sourdough starter from scratch.
  • A sourdough starter would be handy although not necessary if you only wish to use commercial yeast.
