
Ingredients :
2 tablespoons of green tea
4 tablespoons of sugar (adjust to taste)
Fresh mint
½ liter of boiling water
Optional herbs:
A small amount of rosemary
A small amount of chiba (wormwood)
Tools:
Moroccan teapot (Berrad)
Colored tea glasses (or any type of traditional Moroccan tea glasses)
Serving tray
Kettle (for boiling water)
Tea strainer
Step 1: Preparing the Tea Base
We start by placing two tablespoons of green tea into the teapot.
Then,we add about a cup of tea or 90 ml of boiling water.and let it sit for about one minute.
Next, we pour it into a glass and keep it aside — this is what we call “the spirit of the tea
Step 2: Rinsing the Tea Leaves:
Next, add another small glass of boiling water just to cover the leaves.
Swirl it a bit and discard the water.
This helps clean the tea and remove bitterness.
*Here, I’m showing you the dust left in the water after we’ve rinsed the tea. This water isn’t for drinking — it’s just to clean the tea leaves, and we throw it away afterward. We don’t keep it.
Step 3: Brewing the Tea:
Now we take the tea spirit that we saved earlier, take a strainer and pour the tea spirit into the teapot.
Then, we add about half a liter of boiling water.
Place the Teapot over low heat and let the tea boil once.
As soon as it starts boiling, turn off the heat.
Step 4: Wash mint:
We take a bowl of tap water and wash the mint well two or three times, then leave it to drain from the water until it dries for 5 minutes.
After washing and drying the mint, take a handful of fresh mint. we cut the leaves and stems into pieces and rub them well between your palms to release a fragrant aroma. This is one of the secrets to successful Moroccan tea.
Add the mint to the Teapot along with about 4 tablespoons of sugar, or adjust according to your taste.
For a healthier tea, you can skip the sugar — it all depends on your personal preference.
Step 5: Mixing the Tea
Now we mix — but not with a spoon!
Pour a glass of tea and return it to the pot. Repeat this 3 or 4 times.
This helps the flavors blend together perfectly
Step 6: Tasting and Letting It Steep
Taste the tea. If it’s not sweet enough, add more sugar and mix again using the same pouring method.
Then, let the tea rest for 10 to 15 minutes. This allows it to steep and develop a stronger, richer flavor.
Adding herbs:
These herbs are optional, but they add a wonderful flavor to the tea.
You can add them at the same stage as the mint and sugar.
Again, you can choose to use only mint, only herbs, or a mix of both — it's up to your preference.
Just add a small amount of wormwood ( Chibba) or rosemary to avoid making the tea too bitter.
You can also add other types of herbs such as lemon verbena, chamomile, or any aromatic herbs you like, according to your taste.
