
Hello and welcome to our course, "Learn to Bake Panettone." In this course you will learn to make one of the most popular holiday breads in the world, filled with butter, eggs and fruit.
Some things you should know before starting the course.
To make Panettone, you will need a natural levain, more commonly known as a sourdough starter. You will use the starter to make a Lievito Madre, which then leavens the final Panettone dough.
Make a Lievito Madre from your sourdough starter. Lievito Madre is a stiff dough used to leaven the Panettone.

Using the Lievito Madre, mix up the pre-ferment dough incorporating the flour and liquids.
Continue developing the pre-mix dough.
Now that the pre-ferment dough is done developing, add the butter.
Get the finished Panettone pre-ferment dough ready for proofing.
Starting with the pre-ferment dough, make the final Panettone dough.
Finish up the final Panettone dough by adding the rest of the ingredients.

Panettone, with it's rich soft buttery interior, studded with fruits, is one of the most loved holiday breads in the world. It was created around 500 years ago in Milan, Italy. Baking up Panettone is an art as well as a method. Some of the finest Panettone bakeries won't share their secrets.
