Isomalt is derived form the name Isomaltitol, which is a type of sugar substitute made from beet sugar. Isomalt is used by many chefs, sugar artists and confectioners over conventional sugar because when it comes to making showpieces, cake decorations, dessert garnishes and candy; it is an excellent choice.
