Getting to the root cause of any disease is the only way to truly heal oneself. My research so far has led me to uncover 4 main causes of diabetes. First and foremost is excessive fat (especially saturated fat) in ones diet. Second are the preservatives (and saturated fat!) in processed foods. Third and forth are specific proteins found in Milk and Wheat that pass though our intestinal wall and cause autoimmune reactions. As more research is done, I will add to this list but these are the heavy hitters in our diets today.
To begin… the most important macronutrient to reduce in your diet is fat. This is what a pound of fat looks like.
Wild ey? The thing is we think it all goes to one region like our ass or stomach. But in reality fat gets deposited everywhere…
Like in our arteries and on our organs. I’m sure you have heard of fatty liver disease. And you have also heard of heart disease, the number one cause of death in America. A heart attack is caused by a buildup of plaque in the walls of the arteries that lead to the heart. A stroke is a buildup of plague in the arteries that lead to the brain. Both buildups are caused by an over consumption of trans and/or saturated fats.
Back in the day, people would collect and reuse the fat leftover in the pan after frying bacon. There was one golden rule though… don’t pour the bacon fat down the drain. Why? Because everyone knew… it would clog the sink. Well the same goes for your arteries.
Dr. Esselstyn’s life long work on coronary heart disease shows that the plaque actually builds up within the walls of the arteries starting as far back as in the womb if the mother is consuming a high fat diet. Eventually, some 40 years later, the inner “endothelial” wall of the artery gets so congested with fat buildup that they rupture and causes either a heart attack or a stroke. If your endothelial wall somehow holds up, in due time, the arteries will harden, also known as atherosclerosis, and heart disease will set in. Heart disease can easily be reversed however, when the plaques are still soft. Once they harden it becomes much harder. Either way it would still be worth trying a dietary change for 3-4 months before taking your chances with a bi-pass. Plus even if you choose surgery… if nothing changes in your diet, the plaques will develop again.
Fat also has an effect on insulin resistance. Studies have shown that the higher your fat intake the higher your insulin resistance. Excess fat consumed gets absorbed into the cells and stored as fuel. When the cells are full of fuel, they tell the insulin receptors not to let anymore fuel in. Subsequently, glucose, the human body's primary source of fuel, gets blocked and cannot be transported into the cells. This is referred to as insulin resistance. If the sugars are not allowed into the cells they remain in your bloodstream and you end up with high blood sugars. Does that make sense?
Within just a few weeks of changing my diet my insulin needs dropped by 40% and I was eating 10-15 pieces of fruit a day. Even I was blown away. I cover exactly how much fat is needed in the Part 3: Transition book but let’s have a look now at best and worst sources.
There are four different types of fat all varying by the length of the carbon chains and how many hydrogen atoms are bonded to each chain. Mono- and Poly-Unsaturated fats are considered good fats because there is still some room for the body to bind more hydrogen atoms to the chain, making them usable by the body. These are found in vegetables, nuts, seeds and fish. Mono-unsaturated fats are highest in avocados and most nuts and seeds. Poly-unsaturated fats are the Omega 3’s and 6’s we hear a lot about and are highest in flax and walnuts. These unsaturated fats are essential in building cell membranes and nerve coverings and in reducing harmful LDL cholesterols and triglycerides in our blood.
Saturated fats, as the name states, have been fully saturated with hydrogen leaving little use for the body. These are the fats that line your arteries with plaque. A diet rich in saturated fats will also drive up bad LDL cholesterol. The products with the highest saturated fats are fish, fowl, meat, whole milk, and coconut. The chart above says to reduce your intake. My recommendation is to do your best to avoid them entirely.
To my complete surprise, coconut oil has 90% saturated fat… higher than butter at 64% and beef at 40%. Again saturated fat raises bad LDL cholesterol. However, studies have shown that coconut oil also raises the good HDL cholesterol due to it’s high content of Lauric Acid. So the overall effect is balanced. That said, you still want to keep all coconuts products to a minimum. From my personal experience, the moment I cut out the coconut products my sugars were way more controlled. I could enjoy more fruit without needing more insulin.
Whether you produce insulin or inject it, the same fact remains… the more insulin you use the more weight you gain. It’s a simple equation. And the more fat in your diet the more insulin you will need, meaning your pancreas has to pump out more insulin for it to have an effect. Your pancreas will fail at some point. It’s not invincible. That is why there are 86 million pre-diabetics in this country with 1.4 million of those being officially diagnosed with diabetes each year. Please pay attention to your fat intake.
This is an exceptional display of how increasing the fat in your diet results in various diseases. Notice how heart disease is right there at the same point as the Atkins and Paleo diet. As a side note, there are some studies out there that show a Paleo diet is beneficial to your health and lowers your risk of heart disease. But when you look a little deeper you will see that these studies compared Paleo eaters to Standard American Diet (SAD) eaters. Obviously, if you remove all the processed junk from your diet, as Paleo recommends, you will see improvements in your health. This does NOT however mean Paleo is ideal. It’s highly acid forming and as a low carb diet, it’s nutrient poor, which we now know starves your cells of vitality. It’s also way too high on fat, which is why it’s right there next to heart disease.
But notice here on this chart that the average raw food diet is also too high in fat. It’s higher in fat than the Standard American Diet. That is because of all of the nut seed butters spread on nut seed crackers, the rich yummy raw chocolates made from coconut butters, and the endless use of olive oil. I used to pour olive oil on everything! I was using fat to substitute for the sugars I was “not allowed” as a diabetic. You can only imagine how shocked I was to discover that my 23 years of veganism could actually have caused my suffering from diabetes, exhaustion, and daily chest pains. My body was slowly collapsing.
I am 100% convinced that transitioning to a low fat diet saved my life. I will share exactly what that diet looks like and the day-to-day details in the Transition book. But here are some helpful tips to start.
Since fat has no smell or taste, only a greasy texture, it is easy to hide. This chart shows you some places where fat is hiding.
If you look towards the bottom right you will see hard cheese. Just 30 grams of hard cheese has 10 grams of fat. 1/3 of cheese is saturated fat. Notice also how a blueberry muffin is on par with a sirloin steak. Wild ey?
High fat products also exist in the veggie world. As you can see humus is way up there. Avocados are high on the list as well as are nuts and seeds. Ideally you consume 1/3 an avocado a day or ½ every other day and only small quantities of nuts and seeds daily. Again these are unsaturated fats, will not raise your bad cholesterol, and are very important to have in your diet, just in a limited amount.
The last unexpected place fat is hiding is in oils. Safflower, vegetable, canola oil and yes olive oil too! All oils contribute to cardiovascular disease and insulin resistance. Let me say that again… All oils contribute to cardiovascular disease and insulin resistance. The Mediterranean diet that is loaded with oil was only successful because it was also loaded with fresh fruits and veg that counteracted the negative effects of oil.
To make oil one must strip away all of the protein, carbohydrates, and fiber to create a concentrated unnatural product. Oil is 100% fat! I say unnatural because Nature designs things whole with all the nutrients we need in the exact quantities we need. Each nutrient comes with at least 8 other nutrients that act as cofactors aiding the digestion and absorption of that nutrient. That’s why I don’t advise supplements. Extracting one element out is not how nature designed it, nor how our bodies are designed to accept it. And yes… that includes multi-vitamins. Because that still won’t account for the thousands of phytochemicals that come perfectly packaged in whole plant food. We cannot stuff all of nature’s brilliance into a pill no matter how hard we try.
Back to oil… adding just two tablespoons of olive oil to 150-calorie salad, turns it into a 600 calories salad. Wild ey?
How do you make a salad without oil you ask??? Aha you make tapenade! Take whole olives blend them up with garlic and basil and you have a gorgeous dressing with exactly the amount of fat you need and you still get all the vitamins and phytochemicals that come with olives. It’s that easy! Honestly… once you break the habit of needing oil on your salad, you will never understand why we thought to grease up a lovely fresh salad in the first place. It won’t make sense anymore. Once you adjust your thoughts you will adjust taste buds. Check out the recipes section of my website www.feedadiabetic.com for some delicious and easy recipes. Definitely try the tahini dressing. It’s my favorite and gives you a nice dose of calcium from the sesame seeds.
Fat often gets exchanged for high sugars. You need to get used to reading labels and scanning for HFCS, Fructose, Glucose, Sucralose and artificial sweeteners, especially aspartame. Aspartame is an excitotoxin and has been linked to brain tumors. Please get all sugar-free sweeteners, sodas, yogurts and gum out of your diet. Next time you chew on gum think brain tumor. That will help you kick the habit. Additionally, have a look at the list of flavor and color enhancers, such as Blue 1 and Red 40, and the list of preservatives, such as sodium benzoate, citrate, nitrate, sorbate, potassium sorbate, and sulphur dioxide. These are not natural ingredients. They do not belong in your body.
In addition to being loaded with fat, processed foods and meats are loaded with preservative too. Preservatives are designed to extend the shelf life by preventing bacterial growth. Preservatives have been linked to weakened heart tissues, respiratory conditions such as asthma and a lot of new research is coming out on preservatives causing behavioral changes, such as hyperactivity, in young children. How many of you know of some hyperactive kids out there? Adult bodies have been numbed to the stimulants but give a kid too much sugar and you see the effects immediately. Their adrenal glands haven’t been worn out like ours.
A perfect example of this is drinking alcohol. The more you consume the more you need to feel an effect. That’s actually your body protecting you. It intentionally numbs the response or you would die from such levels of toxicity. Please watch what you are feeding your kids!
Processed fake foods also cause major inflammation in your system, which leads to arthritis, osteoporosis, and diabetes to name just a few. The most concerning of all preservatives are nitrites and nitrates, which have the ability to transform into cancer causing carcinogens once mixed with your stomach’s gastric acid. We are playing with nature and it is playing with us back.
We need to move towards a whole, raw, organic and local plant-based diet. Start stocking up on fresh organic fruits and vegetables. We have strayed so far away from our natural diet. But it’s really quite simple to fix… just eat what comes from the earth in it’s natural state. The best part about this diet is you can eat as much as you want. It’s awesome!
Next on the list to omit from your diet is dairy. Dairy is highly acid-forming and mucus forming in the body. It is latent with growth hormones, antibiotics, pesticides from the feed, and pus. That’s right pus! The cows are artificially inseminated and continuously pregnant. Growth hormones are used to produce more milk which causes their utters to be unnaturally large and often infected. One study I read found that one drop of pus is in each glass of milk! Might sound insignificant but if I stood over your glass of milk and squeezed out a drop of puss into your cup from my infected finger would you drink it? Point made I’m sure.
Sayer Ji posted his latest research finding relating to milk and diabetes. In it he stated the following:
It is known that cow’s milk proteins such as beta casein A1 may be responsible for causing the human body to lose self-tolerance and form auto-antibodies to a number of self-structures relevant to type 1 diabetes, but this latest study indicates that the presence of bovine insulin may also play a part in stimulating cross-reactivity to our own insulin-producing beta cells, adding a bit more complexity into the picture and underscoring how it is important to respect the profound differences in physiology and biological needs pertaining between species.
You can read the full article here plus many other fascinating articles on his website www.greenmedinfo.com.
Another interesting study was conducted to test the effects of pasteurizing milk. 10 calves were fed only pasteurized milk. Meaning the milk was heated to kill all pathogens and fed via a bottle. Within two weeks 9 out of 10 calves died of malnutrition. The reason for this is that heating milk also kills all the nutrients. If you take home one lesson from this book please let it be to stop feeding your kids milk! It is totally void of nutrition and loaded with harmful health risks. In the short term common effects are ear infections, allergies, asthma, constipation, and acne. Long-term effects include higher risks of prostate and ovarian cancer, Type 1 diabetes, multiple sclerosis, atherosclerosis, inflammation, premature aging, and higher cholesterol levels.
On a personal note, the day I cut out dairy is when my childhood asthma went away. Get dairy out of your diet and that of your family’s please! That goes for baby formula especially! There are plenty of plant-based options on google.
As for adults, it takes literally one minute to make hemp or flax milk. Blend a quarter cup of seeds with one to two cups of water depending on how think you want it. That’s it. So easy! No preservatives, no HFCS just vitamin and mineral rich milk. Check out my website for more recipes!
Lastly, the one thing I used to miss as a vegan was cheese. I used to walk around Lugano, Switzerland nibbling on a block of parmesan cheese. That is until I learned how it is made. To make cheese you take the casein portion of milk and let it rot until the proteins putrefy, the carbohydrates ferment, and the fats go rancid. And voila stinky cheese! It’s a toxic mess! Please do NOT cut the cheese!
The fourth cause of Diabetes has to do with a protein called gliadin found in wheat. According to Sayer Ji’s research, the gliadin passes through the intestinal walls and attaches to the pancreatic islet cells. These insulin producing cells then get tagged as antigens which triggers the immune system to destroy those cells, hence the term autoimmunity. And just like casein, gliadin can be passed through a mother's breast milk and cause these autoimmune reactions in young children, again why we are seeing an epidemic of 4 year olds with diabetes. OK, you guys are not going to like me for this one but coffee is definitely on the list of things to eliminate. Studies have shown that caffeine makes you 30% less insulin sensitive. This means you will need to produce or inject 30% more insulin for every carb you take in. I definitely notice a significant drop in my insulin needs when I cut out coffee. And again, insulin’s job is to force the sugars into your cells whether they need it or not. So the more insulin the more weight gain. It’s that simple.
Another interesting point about coffee is that it has no calories. So there is nothing for your body to breakdown and gain energy from. So why is it that you feel a jolt of energy from coffee? Well, that is because your body sees caffeine as a toxin and so your body will pull from it’s own energy reserves to work hard at removing that toxin. This also explains why you go running to the toilet after a cup. I have a saying, Toxins in… toxins out. You may have experienced the same with cigarettes or cocaine. Both make you go running to the toilet. A really interesting change I noticed once I stopped drinking coffee is I stopped sweating so much, which now make sense since sweating is another way your body removes toxins.
Lastly, with coffee you have the added effect of it being acidic, which means your body has to pull alkaline minerals from your bones and tissues to balance out the acid. So essentially you are starting your day off with a cup of acidic toxins that weaken your bones and tissues, fatigues your adrenal glands, and makes your gain weight by being more insulin resistant. Not a good start. Please consider switching to herbal teas. Once you get used to tea, you will find coffee to be too acidic to enjoy. Again, it’s just a matter of retraining your taste buds, which starts with retraining your mind. We cover that concept a lot in the Transition book.
Question for you… why don’t we drink ocean water??? That’s right because we know the salt content will eventually dehydrate and kill us. So whyyyyy on earth would we remove the water and just consume the toxic component? It’s insane if you really think about it. Yes you need some sodium in your diet to regulate fluids and transmit electrical impulses throughout the body but get it in whole form in the dose nature intended. Chop up celery or sprinkle kelp on your salad. That way you are sure to get the right dose. I chop some celery up and bring it as a snack with walnuts. It’s delicious. Or I throw half a stalk in with my smoothie. It will enhance the flavors in the smoothie, just like adding a pinch of salt to baked goods and you will get your daily dose of sodium.
Salt is an addiction just like sugar. The more you use the more you need. Once you get salt out of your diet and your taste buds reset, you will enjoy foods as they come.
Vinegar is toxic?
This one I found super interesting. To make vinegar one must combine 1 part acidic acid with 19 parts water. If you were to enter a chemistry lab you would find the acidic acid bottle labeled with a cross and bones sign. It is considered a highly toxic chemical. Diluting it with 19 parts does not change the fact that you are ingesting poison. It’s the same concept as drinking ocean water. Are you guys are getting this? Good!
