What is Isomalt?
Isomalt is derived form the name Isomaltitol, which is a type of sugar substitute made from beet sugar. Isomalt is used by many chefs, sugar artists and confectioners over conventional sugar because when it comes to making showpieces, cake decorations, dessert garnishes and candy; it is an excellent choice. Compared to sugar, Isomalt is more resistant to humidity and crystallization. Therefore, decorative elements made with Isomalt lasts longer and has excellent structural integrity, compared to normal sugar. In food competitions and culinary art salons, it is very popular with professionals when it comes to creating beautiful showpieces and decorative cake ornaments.

Also, how to securely attach the fish to its base and support stand. Students will learn how to make intricate features of the fish and also other effects and decorations from Isomalt, such as corals and water effect/splash. In the process, you will learn how to cook, colour, pull and shape Isomalt.
As an added bonus, students will get an additional video to have a closer look on how to pull and shape hot Isomalt. Last but not least, students will also learn how to store Isomalt for long periods of time so that you can reuse them when required.
