    Learn a simple beef rib smoking method from prep with kosher salt, black pepper, and a light binder to low-and-slow cooking at 235–250 degrees on a side burner smoker.

    Set up a barrel smoker with open vents and charcoal to reach temp, add hickory and mesquite chunks for heavy smoke, then wrap the beef ribs after a 10-minute rest.

    Wrap beef ribs in foil to trap juices, bone side up, then finish on the smoker at 200–210 degrees with oregano and parquet butter for flavor.
