We, Simonetta and Paola, are two Italian sisters. We define ourselves this way because our father was from Puglia, our mother from Veneto with family all over the territory. For years we changed cities of residence for our father's work and then stopped in Florence and Chianti. Our background is, therefore, from North to South of Italy, and this brought us to a vast knowledge of typical Italian dishes.

Simonetta- degree in biology and therefore the scientific mentality

Paola -degree in modern languages so the anthropological mentality.

As children, we started cooking with our mother, our neighbours. Then the interest went to understand the ingredients, their origin, their characteristics but also the needs of people for food intolerances ,for diets or for the short time that people have to cook.

Since 2002 in Toscana Mia, we organize Italian Hands-Onn Italian Cooking classes to guests from all over the world.

Our homemade cooking, realized in Tuscany with organic products from our garden, can be prepared when back home.

Magazine from various countries talked about us; we appeared in TV programs, we worked with well -known chefs.

When cooking ingredients are the most essential, but many times we may feel lost as we need to know how much of each component we have to use for our recipe.

The way of measuring differs from country to country, but there are easy ways to avoid these differences.

Furthermore, we can also readjust the quantities according to our taste. The most straightforward example is with salt and pepper, which may differ a lot from person to person.

We are giving you the traditional quantities, but you can change according to your taste.

Many times dry pasta is called 'factory pasta' and considered inferior to fresh pasta. Instead, they are different in doughs and suited to different kinds of dishes.

· Fresh pasta is usually made from eggs and flour and works well as a tortellini or ravioli dish.

· Dry pasta is crafted from finely ground semolina flour and water and works well with ragu and other sauces, or soups. The difference in popularity between the two kinds of pasta can be attributed mostly to the fact that dry pasta is more convenient to store and lasts for longer.

Peppers/Capsicum, Peperoni in Italian are a vegetable you can easily find in every season, and you can use in so many different dishes. What we like very much is the possibility of preparing them stuffed as they can be a one-dish, a side dish or for a tasty office desk bag.

homemade gelato / ice cream is significantly better or higher quality than store bought

In certain countries, the terms gelato and ice cream are used interchangeably, but in the US these are two different products. Gelato first made its way to the US in 1770, brought over by Italian immigrants. Then American technology changed the technique of making and marked the start of industrial ice cream production.

The key ingredients – milk, cream, and air – might be similar, but the difference lies in the proportions of them all and how they are churned together

Pistachio Gelato

Beyond the vanilla and the chocolate gelato / ice cream, pistachio gelato/ice cream is often the most requested. It’s not easy to make gelato/ice cream with pistachios – very often salty ones are sold. The best way is then to get the pistachio cream.

At home with the ice cream maker we can make this beautiful gelato/ice cream ourselves.
