Greens are some of the most nutritionally dense, enlivening foods available in nature! Calorie for calorie, leafy greens have more concentrated nutrition than any other group of food. They are packed with phytonutrients including minerals like calcium, iron, potassium and magnesium; vitamins including C, E, K and B vitamins; antioxidants; and even small amounts of essential Omega-3 fatty acids. This nutrient density gives greens many health benefits.
This lecture contains an introductory lesson on the nutritional content of leafy greens as well as a downloadable handout comparing the nutritional content of some common green vegetables.
Dark leafy greens are important sources of many nutrients especially antioxidants and anti-inflammatory phytonutrients.
Important phytonutrients in greens include beta-carotene, lutein and zeaxanthin which provide antioxidant protection against free radicals and help to strengthen the immune system. These important compounds help protect our cells from oxidative stress which can occur as a result of damage from free radicals generated during energy metabolism in the body.
Many vitamins are also found in leafy greens.
This lecture also contains a downloadable handout for quick reference of foods which provide vitamin K. Since this vitamin plays an important role in blood clotting, individuals taking anticoagulant medications (blood thinners) like warfarin (Coumadin®), heparin, dalteparin, enoxaparin (Lovenox®) and tinzaparin (Innohep®) should aim to keep the amount of leafy greens and other sources of vitamin K in their diets consistent in order to avoid altering the level of the thinness of the blood. While it is generally not necessarily required to avoid leafy greens when taking such medications, it is important to keep vitamin K intake consistent over time and to discuss any dietary changes with a health professional.
In addition to these important vitamins, leafy greens provide healthy doses of many important minerals.
Leafy greens contain iron which is important for healthy red blood cell production and oxygenation of the body. While plant-based iron is often harder to fully absorb than iron from animal sources, there are some easy ways to enhance the absorption of this important nutrient. Learn more about what foods can be combined with greens and other plant-based sources of iron to enhance the absorption of iron from these foods.
A unique component of green plants that can benefit our health in many ways when we consume them is chlorophyll. This green pigment gives plants their green color and allows them to facilitate one of the most miraculous processes on earth, the process of photosynthesis. Photosynthesis converts the energy of sunlight, water and carbon dioxide into glucose, a nutrient-dense fuel source.
Leafy greens are also great sources of healthy macronutrients which help provide the building blocks of our bodies and allow them to function optimally.

Arugula (also known as rocket) is a cruciferous leafy green with a peppery taste. It is delicious raw in salads or lightly cooked. It is a good source of potassium, a mineral which is important in blood pressure balance and bone health.
Beet greens are in the same family as spinach and chard and share a mineral-like flavor and soft texture. This leafy green supplies good amounts of protein, phosphorus, and zinc, along with plenty of fiber. Beet greens are also a great source of vitamin K and iron, which support balanced clotting and blood health.
Bok Choy is a mild Chinese cabbage with a mild, sweet flavor. It supplies a wealth of nutrition including vitamins C, A, and K, calcium, magnesium, potassium, manganese, and iron. The high levels of beta-carotene in bok choy help support eye health, and like other cruciferous vegetables, bok choy may help prevent breast cancer.
Swiss chard is a leafy green with a mineral taste and soft texture, similar to spinach. It is a good source of antioxidants, including vitamin E, beta-carotene, lutein, and zeaxanthin, which help maintain healthy eyes, hair, and skin. Swiss chard also contains magnesium and potassium, which are minerals involved in managing blood pressure and maintaining bone health.
Collard greens are a cruciferous and leafy green belonging to the cabbage family. They are a good source of beta-carotene, an antioxidant precursor to vitamin A that can help prevent cataracts, and macular degeneration as well as maintain healthy hair and skin. Collard greens are also a good source of vitamin K, which support bone and blood health.
Dandelion greens belong to the Sunflower family and have a long history of medicinal uses. While quite low in calories, dandelion greens are packed with nutrition. They are rich in calcium and iron as well as antioxidants like vitamins A and C. The nutrients in dandelion are anti-inflammatory and support healthy fluid balance in the body. They also support effective detoxification.
Kale is a cruciferous leafy green from the cabbage family. It is packed with nutrients including antioxidants such as vitamin C, beta-carotene, lutein, and zeaxanthin, which help maintain healthy eyes, hair, and skin. Calcium and potassium in kale help keep your bones and teeth strong and can balance the blood pressure. Kale is also high in the anti-inflammatory antioxidant quercetin, which protects against inflammation, arthritis and memory loss.
Cabbages are cruciferous vegetables which provide a wealth of cancer-fighting compounds and antioxidants such as vitamin C. These versatile greens come in several varieties and can be enjoyed cooked or raw in salads or stir fries, shredded into a slaw, or made into sauerkraut.
Radicchio is a colorful leafy vegetable with a bitter taste. It is commonly added raw to salads or braised for a side dish. It is a good source of potassium, a mineral involved in managing blood pressure and strengthening bones. Radicchio also contains the antioxidants vitamin E and lutein, which help maintain healthy eyes and skin.
There are a wide variety of lettuces, which are all low calorie leafy greens. Lettuces such as romaine, green leaf, red leaf, bibb, and butterhead, are good sources of antioxidants, including beta-carotene, lutein, zeaxanthin, and quercetin. Lettuce is also a good source of potassium and vitamin K.
Spinach is a dark leafy green vegetable which is versatile and nutrient-dense! It is high in fiber and very low in calories.
