4 Basic Principles of Food Safety
Identify physical, chemical, and biological hazards in food preparation to ensure safety. Examine kitchen examples such as glass, packaging fragments, bandages, cleaners, pesticides, and microbiological risks.
Identify what microorganisms are and how they are classified into seven classes, including bacteria, molds, yeasts, parasites, algae, and protozoa, and explore their food safety roles, toxins, mycotoxins, and fermentation.
Identify high risk foods that bacteria favor, such as meats, eggs, fish, chicken, dairy, mayonnaise, and ready-to-eat dishes, and contrast with low risk foods like jams, grains, and canned goods.
Explore how pathogen bacteria affect food safety by distinguishing those that cause food infection from those that cause food intoxication, and learn the diseases and foods linked to these bacteria.
Understand what contamination is, why unseen contamination is most harmful, and identify key bacterial sources such as human and animal feces, garbage, water, soil, hair, insects, rodents.
Prevent chemical hazards by keeping detergents away from foods, labeling transferred detergents, storing cleaners below foods, and washing hands and produce after chemical exposure.
Practice rigorous kitchen hygiene, wash hands often, use paper towels, keep raw and cooked foods separate, follow first in, first out, and maintain proper storage and temperature controls.
Learn how cleaning and disinfection differ, why detergents and chemical applications are essential on food contact surfaces, and why both steps must be performed in sequence.
Learn how to store foods in the fridge with shelf-specific guidance. Place perishable items like meat, chicken, and fish on the top shelf with proper packaging, and monitor fridge temperature.
Packing groceries correctly prevents cross contamination and preserves temperature. Separate cold and hot items, refrigerate within 30 minutes, and wash produce under running water before refrigeration.
Explore how packaging protects food from physical, chemical, and microbiological changes, supports safe storage and marketing, and how to spot damaged packaging and avoid sun exposure while shopping.
Discover common food frauds and how to spot adulteration and misleading coloring in powdered red pepper, black pepper, crushed red pepper, and olive oil to safeguard health and budget.
Explore how enzyme deficiencies cause food intolerance, such as lactose intolerance from lack of lactase. Identify common intolerances—lactose, gluten, caffeine, fructose, and histamine-related triggers—and symptoms like diarrhea, bloating, or headaches.
I am sure that you pay attention to buy and consume natural foods to be healthy.
But could you be missing one thing?
Healthy eating is done with healthy foods.
So, how a food being healthy?
With food safety
Well, Can you take enough care for your foods to be safe?
According to the report published by the World Health Organization in 2019, 9% of the world population, namely 750 million people, are exposed to severe food security problems. 17%, that is 1.3 billion people, are exposed to moderate food security problems. In summary, 2 billion people are experiencing food security problems. Every year, 110 billion dollars of health expenditure is made worldwide for health problems caused by insufficient food security. The numbers are horrible.
I am Mithat Taş. Food Engineer, Healthy Nutrition Coach and Professional instructor. As a matter of my expertise, I must state that if there is not enough food safety, we can not talk about healthy nutrition. No matter how healthy the foods we consume, if they come to our table without adequate food safety conditions, it will impair our health.
I prepared the "Food Safety for Everyone" course so that each individual can access healthy foods in a reliable way.
In this course;
I have included information on how to read labels when shopping for foods, what should be the characteristics of food packaging, what criteria should be considered while buying foods from street vendors, what are the frauds made in food products, and many more that will protect our health in daily life and help us consume healthy foods.
I prepared this course, which consists of 8 parts and includes 33 videos, in addition to 15 tables, in a simple and easy-to-understand way. With this course, you can make your food more safety and eat healthier.
I strongly recommend that you take this course in order to learn all the details about food safety, which everyone should know and which is very important for our health and life.
See you in the first lesson
