    My name is Cindy I want to welcome you to Cooking With Xin. Xin means heart in Chinese, it is also my family name. So, when you are cooking with Xin you are cooking with my family's recipes and with love in your heart. In today's episode, I will teach how to make Shou Gao Mian (Chinese hand noodles) a favorite staple food in my family.

    "Hand Noodles" (Shou Gao Mian) is a simple handmade egg noodle recipe that dates back to time immemorial. This type of noodle is popular in Northern China. It is simplistic in nature using the proper balance of four basic ingredients, Flour, Water, Egg, and Salt. It does not require any special skills or equipment, anyone with a mind to do so can make these noodles. Perhaps it is due to its simplicity that in certain parts of China noodles like these are eaten more often than rice.

Hello, my name is Cindy,

I am from Inner Mongolia China. My mother has taught me how to cook my whole life. Over the years I realized I could show my love to the world through my art. They say the path to one's heart is through their stomach. In this course, I will teach you the recipes that have found their way to my family's heart. What you will learn in this class are real Chinese foods prepared and eaten in real Chinese homes on a regular basis. What you will not learn in this class is how to prepare Americanized Chinese fast food.

The first section of this course teaches how to make Chinese hand noodles. This family recipe dates back to time immemorial. It is very popular in Northern China. We start with noodles because it is a staple food for Chinese food much like rice.

In the second section of the course, I teach several easy dishes to be served on noodles or rice.

In the third section of the course, I teach a few of my family's favorite stand-alone meals.

The fourth section teaches how to make Chinese dumplings (Joa zi), and Chinese steamed buns (Baozi).

The fifth and final section of the course teaches how to make four-color bread, and introduces the basics of bread art.

In the end with the knowledge you will gain from this course you will be able to prepare a fifteen-course feast fit for the finest of occasions. Guaranteed to impress your guests and ensure your culinary skills will be remembered.
